Peach-avocado salsa
- 1 can (15 oz) peaches in water, drained and medium diced
- 2.5 cups medium-diced tomatoes
- 1/2 a small onion, small diced (I used about 1/3 c)
- 1 jalapeno, seeded and small diced (or leave the seeds in if you prefer it to be spicy)
- 2 TBSP lime juice
- 1 clove garlic, minced
- 3 TBSP cilantro, coarsely chopped
- 1 avocado (try to find one that is not overly ripe), medium dice
Come the first seven ingredients in a glass or non-reactive bowl. Gently fold in the avocado, let sit for at least 30 minutes, and serve.
This salsa is delicious on it’s own, but is also yummy served on top of fish or chicken tacos. Enjoy!
